GD32 is no longer supported,because was found to not be totally compatible with STM32, and very few vendors sell GD32 boards, and those that do sell GD32 cost more than buying a much better STM32F4 board

I would recommend you buy a STM32F103 or STM32F4 board instead

Welcome BluePill STM32 has better ADC ( and more ADC's) than ESP8266 so can be better for logging. However if you are not logging from the ADC then you may not need the STM32 at all.
