Now I am getting confused, the PCM53 that I can find in google is a 16bit DAC, not like the PCM61 which is a 18bit DAC, but the PCM53 is a parallel DAC, so I am guessing that was a typo. That one has 18bit of resolution vs the 16 bits in the pt8211, so they are not the same or work the same.

Your interrupt handler should be called overflow, not on compare.
If I remember right you can do that by using this (but I don't remember for sure, haven't looked at the code in a few weeks or months now):

timer.setPeriod(1023); You are setting manually the overflow and the prescaler, but setPeriod also sets the overflow and prescaler. Also I'm not sure what frequency you are wanting to play the samples at, since you are using a prescaler of 1 and overflow of 65535. That would mean: (72000000 /1)/655...

Andy got to the key of the subject. For 3 axes with no levelling and 1 extruder, an AVR is enough. When you get to delta printers, mesh bed levelling, multiple extruder, multiple steppers per axle, the AVR are hitting limits and you either disable some features, or the printer chokes at higher speed...

PIN_MAP and the enum indices have to match, because that's what the core relies on everywhere.
I use a similar piece of code to decide the timer device, I don't think it can get simpler than that.
