But shouldn´t the STM32 be faster with its original settings? Why should it be necessary to overclock it?

As long as you use

  SPI.setClockDivider(SPI_CLOCK_DIV32); // 2.25  MHz
don´t expect to be faster...

It will be faster only if you use SPI_CLOCK_DIV2 -> 36MHz
